- 1 tablespoon olive oil

- 1/2 cup heavy cream (or milk for lighter version)
- 1/4 cup grated Parmesan cheese, plus more for serving
- 1 teaspoon dried sage
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh sage leaves, chopped (optional, for garnish)
Instructions
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add the gnocchi to the skillet in a single layer. Pan-fry for 4 to 6 minutes, turning occasionally, until the gnocchi puffs slightly and develops golden-brown spots. Remove gnocchi from the skillet and set aside.
- Reduce the heat to medium-low. Pour the pumpkin puree into the same skillet. Stir constantly for 1 minute.
- Whisk in the heavy cream, Parmesan cheese, dried sage, salt, and pepper. Heat the sauce until it just begins to simmer gently. Do not let it boil rapidly.
- Return the pan-fried gnocchi to the skillet. Gently toss to coat the gnocchi completely in the pumpkin sage sauce. Cook for 1 to 2 minutes until heated through.
- Serve immediately, garnished with fresh chopped sage and extra Parmesan cheese, if desired.

- If you want a lighter sauce, substitute the heavy cream with whole milk or half-and-half.
