Enjoy the warm, comforting flavors of fall with this Pumpkin Spice French Toast. It is simple to make and perfect for a cozy weekend breakfast. You control the spice level!
Ingredients
Scale
- 1 cup pumpkin puree
- 4 large eggs
- 1/2 cup milk (any kind)
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice (adjust to your taste)
- 1/4 teaspoon ground cinnamon
- Pinch of ground nutmeg
- 8 slices thick bread (brioche or challah work well)
- Butter or oil for the griddle
Instructions
- Whisk together the pumpkin puree, eggs, milk, vanilla extract, pumpkin pie spice, cinnamon, and nutmeg in a shallow dish until fully combined.
- Heat a griddle or large skillet over medium heat. Add a small amount of butter or oil.
- Dip each slice of bread into the pumpkin mixture, letting it soak for about 15-20 seconds per side. Do not let it get soggy.
- Place the coated bread onto the hot griddle.
- Cook for 3-4 minutes per side, until golden brown and heated through.
- Serve immediately with your favorite toppings.
Notes
- For a stronger spice flavor, increase the pumpkin pie spice to 1 1/2 teaspoons.
- This French toast pairs wonderfully with a maple syrup glaze or a dollop of whipped cream.
- If you prefer a thinner batter, add an extra tablespoon of milk.
- Use slightly stale bread for the best texture; it absorbs the batter without falling apart.
