Description

Enjoy the taste of fall with these easy, homemade Pumpkin Spice Granola Bars. They bring cozy, comforting flavor right to your snack time, just like family recipes should.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup pumpkin puree (not pie filling)
  • 1/4 cup maple syrup
  • 2 tablespoons melted coconut oil
  • 1/4 cup chopped pecans or walnuts
  • 2 tablespoons chia seeds
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup pumpkin seeds (pepitas)


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, combine the rolled oats, chopped nuts, chia seeds, pumpkin pie spice, cinnamon, and salt. Mix these dry ingredients well.
  3. In a separate, smaller bowl, whisk together the pumpkin puree, maple syrup, and melted coconut oil until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir everything together until the oats are evenly coated. The mixture will be thick.
  5. Press the granola mixture firmly and evenly into the prepared baking pan. Sprinkle the pumpkin seeds on top and press them in lightly.
  6. Bake for 18 to 22 minutes, or until the edges are lightly golden brown.
  7. Let the bars cool completely in the pan on a wire rack. Cooling is important for them to set.
  8. Once cool, use the parchment paper overhang to lift the bars out. Cut into 10 to 12 bars.

Notes

  • For a chewier bar, reduce the baking time by 2 minutes.
  • Store the cooled bars in an airtight container at room temperature for up to one week.
  • If you prefer a sweeter bar, add 1 tablespoon of brown sugar to the wet ingredients.
  • You can add 1/4 cup of dried cranberries for extra texture.
