- 3 cups rolled oats
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 1/4 cup melted coconut oil
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 cup chopped pecans (optional)
- 1/2 cup dried cranberries (optional)
Instructions
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, pumpkin puree, maple syrup, melted coconut oil, pumpkin pie spice, and salt. Mix until the oats are evenly coated.
- Spread the granola mixture in a single layer on the prepared baking sheet.
- Bake for 45-60 minutes, stirring every 15 minutes, until the granola is golden brown and crispy.
- Remove from the oven and let it cool completely on the baking sheet. The granola will crisp up more as it cools.
- Once cool, stir in the chopped pecans and dried cranberries, if using.
- Store the granola in an airtight container at room temperature for up to 2 weeks.
Notes
- For extra crunch, press the granola down firmly with a spatula halfway through baking.
- Adjust the amount of pumpkin pie spice to your taste.
- Feel free to add other nuts or dried fruits you enjoy.
