Description

Make delicious pumpkin spice granola at home. This recipe brings the flavors of fall to your breakfast or snack.


Ingredients

  • 3 cups rolled oats
  • 1 cup chopped pecans or walnuts
  • 1/2 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 2 tablespoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt


Instructions

  1. Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats and chopped nuts.
  3. In a separate medium bowl, whisk together the pumpkin puree, maple syrup, melted coconut oil, pumpkin pie spice, vanilla extract, and salt.
  4. Pour the wet ingredients over the oat mixture. Stir well until the oats and nuts are evenly coated.
  5. Spread the granola mixture in a single layer on the prepared baking sheet.
  6. Bake for 45-60 minutes, stirring every 15 minutes, until the granola is golden brown and crispy.
  7. Remove from the oven and let the granola cool completely on the baking sheet. It will crisp up more as it cools.
  8. Once cool, break the granola into clusters. Store in an airtight container at room temperature for up to 2 weeks.

Notes

  • For extra crunch, add 1/4 cup of chia seeds or flax seeds to the dry mixture.
  • If you prefer larger clusters, press the granola firmly onto the baking sheet before baking and avoid stirring too much during the first 30 minutes.
  • You can adjust the amount of pumpkin pie spice to your liking.
  • This granola is great on yogurt, oatmeal, or as a snack.
