- 3 cups rolled oats
- 1 cup chopped pecans or walnuts
- 1/2 cup pumpkin puree
- 1/2 cup maple syrup
- 1/4 cup melted coconut oil
- 2 tablespoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine the rolled oats and chopped nuts.
- In a separate medium bowl, whisk together the pumpkin puree, maple syrup, melted coconut oil, pumpkin pie spice, vanilla extract, and salt.
- Pour the wet ingredients over the oat mixture. Stir well until the oats and nuts are evenly coated.
- Spread the granola mixture in a single layer on the prepared baking sheet.
- Bake for 45-60 minutes, stirring every 15 minutes, until the granola is golden brown and crispy.
- Remove from the oven and let the granola cool completely on the baking sheet. It will crisp up more as it cools.
- Once cool, break the granola into clusters. Store in an airtight container at room temperature for up to 2 weeks.
Notes
- For extra crunch, add 1/4 cup of chia seeds or flax seeds to the dry mixture.
- If you prefer larger clusters, press the granola firmly onto the baking sheet before baking and avoid stirring too much during the first 30 minutes.
- You can adjust the amount of pumpkin pie spice to your liking.
- This granola is great on yogurt, oatmeal, or as a snack.
