Ingredients
Scale
- 3 cups old-fashioned rolled oats
- 1 cup chopped pecans or walnuts
- ½ cup pumpkin seeds (pepitas)
- ½ cup shredded unsweetened coconut
- ½ cup pure pumpkin puree
- ½ cup maple syrup or honey
- ¼ cup melted coconut oil or vegetable oil
- 2 teaspoons pumpkin pie spice
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup dried cranberries or raisins (optional, added after baking)
Instructions
- Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine the oats, pecans or walnuts, pumpkin seeds, and shredded coconut.
- In a separate medium bowl, whisk together the pumpkin puree, maple syrup or honey, melted coconut oil, pumpkin pie spice, cinnamon, and salt until well combined.
- Pour the wet ingredients over the dry ingredients. Stir well until all the dry ingredients are evenly coated.
- Spread the granola mixture evenly in a single layer on the prepared baking sheet.
- Bake for 45-60 minutes, stirring every 15 minutes, until the granola is golden brown and crisp.
- Remove the granola from the oven and let it cool completely on the baking sheet. It will become even crispier as it cools.
- Once cooled, stir in the dried cranberries or raisins, if using.
- Store the pumpkin spice granola in an airtight container at room temperature for up to 2-3 weeks.
Notes
- Adjust the sweetness by adding more or less maple syrup.
