Description

Ingredients

  • 1 cup Milk
  • 1 large Egg
  • 2 tablespoons Unsalted Butter, melted
  • 1/4 cup Pumpkin Puree (not pie filling)
  • 1 teaspoon Vanilla Extract
  • 1/4 cup Strong Brewed Coffee or Espresso, cooled
  • For topping: Maple syrup, whipped cream, extra spice


Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
  2. In a separate medium bowl, whisk the milk, egg, melted butter, pumpkin puree, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  4. Stir in the cooled coffee or espresso until incorporated.
  5. Heat a lightly oiled griddle or non-stick pan over medium heat.
  6. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 2 to 3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the other side until golden brown.
  8. Serve immediately topped with your favorite toppings.

Notes

  • For an extra coffee kick, replace 1/4 cup of the milk with cooled strong coffee.
  • If you don’t have pumpkin pie spice, mix 3/4 teaspoon cinnamon, 1/4 teaspoon ground ginger, 1/8 teaspoon ground nutmeg, and a pinch of ground cloves.
  • Make sure your coffee is completely cooled before adding it to prevent activating the baking powder too soon.
