- 2 tablespoons Granulated Sugar
- 2 teaspoons Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 teaspoon Pumpkin Pie Spice
- 1 cup Milk
- 1 large Egg
- 2 tablespoons Unsalted Butter, melted
- 1/4 cup Pumpkin Puree (not pie filling)
- 1 teaspoon Vanilla Extract
- 1/4 cup Strong Brewed Coffee or Espresso, cooled
- For topping: Maple syrup, whipped cream, extra spice
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
- In a separate medium bowl, whisk the milk, egg, melted butter, pumpkin puree, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
- Stir in the cooled coffee or espresso until incorporated.
- Heat a lightly oiled griddle or non-stick pan over medium heat.
- Pour about 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2 to 3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the other side until golden brown.
- Serve immediately topped with your favorite toppings.
Notes
- For an extra coffee kick, replace 1/4 cup of the milk with cooled strong coffee.
- If you don’t have pumpkin pie spice, mix 3/4 teaspoon cinnamon, 1/4 teaspoon ground ginger, 1/8 teaspoon ground nutmeg, and a pinch of ground cloves.
- Make sure your coffee is completely cooled before adding it to prevent activating the baking powder too soon.
