Ingredients

  • 1/2 cup milk
  • 1/4 cup granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon unflavored gelatin
  • 1/4 cup cold water
  • Pumpkin puree (for garnish)
  • Whipped cream (for garnish)
  • Cinnamon stick (for garnish)


Instructions

  1. In a saucepan, whisk together heavy cream, milk, granulated sugar, and pumpkin pie spice. Heat gently over medium heat until warm, but do not boil.
  2. While the cream mixture is warming, sprinkle the unflavored gelatin over the cold water in a small bowl. Let it sit for 5 minutes to bloom.
  3. Once the gelatin has bloomed, add it to the warm cream mixture. Stir continuously until the gelatin is completely dissolved.
  4. Remove the saucepan from the heat. Stir in the vanilla extract.
  5. Pour the mixture into individual serving glasses or ramekins.
  6. Chill in the refrigerator for at least 4 hours, or until firm.
  7. Before serving, garnish with a dollop of whipped cream, a sprinkle of pumpkin puree, and a cinnamon stick.

Notes

  • For a stronger pumpkin flavor, you can add 1-2 tablespoons of pumpkin puree directly into the cream mixture before heating.
  • If you don’t have pumpkin pie spice, you can make your own by combining 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/8 teaspoon ground cloves, and 1/8 teaspoon ground ginger.
