Description

This Broccoli Cheddar Rice is a quick and comforting side dish. It’s creamy, cheesy, and ready in just 15 minutes, perfect for busy weeknights.

Ingredients

Scale
  • 1 cup uncooked white rice
  • 2 cups water
  • 1 cup broccoli florets, fresh or frozen
  • 1 tablespoon butter
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Cook the rice: In a saucepan, combine the rice and water. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes, or until water is absorbed.
  2. Add broccoli: Stir in the broccoli florets and cook for another 3-5 minutes, until tender.
  3. Make it creamy: Stir in the butter and milk until melted and combined.
  4. Add cheese: Gradually add the shredded cheddar cheese, stirring until it’s completely melted and the rice is creamy.
  5. Season: Season with salt and pepper to your liking. Serve immediately.

Notes

  • For a richer flavor, you can use half-and-half instead of milk.
  • Feel free to add a pinch of garlic powder or onion powder for extra flavor.
  • If using frozen broccoli, you may not need to cook it as long.
