Ingredients

  • 1 medium head cauliflower, cut into bite-sized florets
  • 2 tablespoons olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup buffalo hot sauce
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon honey or maple syrup (optional, for a touch of sweetness)
  • 1/4 cup crumbled blue cheese or dairy-free alternative (for serving, optional)
  • 2 tablespoons chopped fresh chives or parsley (for serving, optional)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cauliflower florets with olive oil, garlic powder, salt, and pepper until evenly coated.
  3. Spread the cauliflower in a single layer on the prepared baking sheet.
  4. Roast for 10-12 minutes, or until the cauliflower is tender-crisp and lightly browned.
  5. While the cauliflower is roasting, whisk together the buffalo hot sauce, melted butter, and honey or maple syrup (if using) in a medium bowl.
  6. Once the cauliflower is done roasting, add it to the bowl with the buffalo sauce mixture. Toss gently to coat all the florets.
  7. Return the coated cauliflower to the baking sheet and roast for another 3-5 minutes, until the sauce is bubbly and slightly thickened.
  8. Serve immediately, garnished with blue cheese and chives or parsley if desired.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the sauce.
