Description
A quick and flavorful chicken dish featuring a bright lemon sauce, fresh tomatoes, basil, and melted mozzarella cheese. Perfect for a weeknight meal.

- 1 pound boneless, skinless chicken breasts, pounded to 1/2-inch thickness
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1/4 cup chicken broth
- 2 tablespoons fresh lemon juice
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 2 ounces fresh mozzarella cheese, sliced
- Salt and freshly ground black pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Add chicken to the skillet and cook for 4-5 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for 30 seconds until fragrant.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
- Stir in cherry tomatoes and cook for 1-2 minutes until slightly softened.
- Return chicken to the skillet. Top each chicken breast with mozzarella slices.
- Cover the skillet and cook for 1-2 minutes, or until the mozzarella is melted and bubbly.
- Garnish with fresh basil and serve immediately.
Notes
- For extra flavor, you can add a pinch of red pepper flakes to the sauce.
- If you don’t have fresh mozzarella, shredded mozzarella can be used.
