Instructions
- Cook quinoa: Combine rinsed quinoa and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until liquid is absorbed. Let stand for 5 minutes, then fluff with a fork.
- Prepare vegetables: In a medium bowl, combine black beans, corn, diced red bell pepper, and chopped red onion.
- Make dressing: In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
- Assemble bowls: Divide cooked quinoa among serving bowls. Top with the black bean and corn mixture.
- Dress and serve: Drizzle the lime dressing over each bowl and garnish with fresh cilantro.
