Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Prepare the crust: In a medium bowl, combine 1 cup flour, 1/2 cup butter, 1/4 cup sugar, and salt. Use your fingers or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  3. Press the crust mixture firmly and evenly into the bottom of the prepared pan.
  4. Bake the crust for 15 minutes until lightly golden. Remove from the oven.
  5. Prepare the filling: In a separate bowl, whisk together the eggs, 1 cup sugar, 1/4 cup flour, lemon juice, and lemon zest until smooth.
  6. Pour the lemon filling evenly over the warm, pre-baked crust.
