Description
A refreshing and bubbly drink made with raspberry, lime, and sparkling water. Enjoy it as a non-alcoholic mocktail or add a spirit for a cocktail.
Ingredients
Scale
- 1 cup fresh raspberries
- 1/2 cup fresh lime juice
- 1/4 cup simple syrup (or to taste)
- 2 cups sparkling water or club soda
- Ice
- Lime slices and extra raspberries for garnish (optional)
Instructions
- In a small saucepan, combine raspberries and simple syrup.
- Heat over medium heat, stirring occasionally, until raspberries break down and release their juice (about 5-7 minutes).
- Remove from heat and let cool slightly.
- Strain the raspberry mixture through a fine-mesh sieve into a pitcher, pressing down on the solids to extract all the juice. Discard the solids.
- Add lime juice to the pitcher.
- Fill glasses with ice.
- Pour about 1/4 cup of the raspberry-lime mixture into each glass.
- Top with sparkling water or club soda.
- Gently stir to combine.
- Garnish with lime slices and extra raspberries if desired.
Notes
- Adjust the amount of simple syrup to your desired sweetness.
- For a cocktail, add 1.5-2 ounces of vodka, gin, or white rum to each glass before adding the sparkling water.
- You can make the raspberry-lime mixture ahead of time and store it in the refrigerator for up to 3 days.
