Simple and delicious bars featuring rhubarb and oats.
Ingredients

- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup packed brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into pieces
- 2 cups chopped fresh rhubarb
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking pan.
- In a large bowl, mix together flour, oats, brown sugar, baking soda, and salt.
- Cut in the butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Press half of the oat mixture evenly into the bottom of the prepared pan.
- In a separate bowl, combine chopped rhubarb, granulated sugar, and cornstarch. Stir to coat the rhubarb evenly.
- Spread the rhubarb mixture over the oat layer in the pan.
- Crumble the remaining oat mixture over the rhubarb layer.
- Bake for 30-35 minutes, or until the top is golden brown and the rhubarb is tender and bubbly.
- Let cool completely in the pan before cutting into bars.
Notes
- Fresh or frozen rhubarb can be used. If using frozen, do not thaw before mixing with sugar and cornstarch.
- Ensure the bars cool completely for clean slicing.
