Description

Simple and delicious bars featuring rhubarb and oats.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into pieces
  • 2 cups chopped fresh rhubarb
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, mix together flour, oats, brown sugar, baking soda, and salt.
  3. Cut in the butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Press half of the oat mixture evenly into the bottom of the prepared pan.
  5. In a separate bowl, combine chopped rhubarb, granulated sugar, and cornstarch. Stir to coat the rhubarb evenly.
  6. Spread the rhubarb mixture over the oat layer in the pan.
  7. Crumble the remaining oat mixture over the rhubarb layer.
  8. Bake for 30-35 minutes, or until the top is golden brown and the rhubarb is tender and bubbly.
  9. Let cool completely in the pan before cutting into bars.

Notes

  • Fresh or frozen rhubarb can be used. If using frozen, do not thaw before mixing with sugar and cornstarch.
