- 1.5 lb carrots, peeled and cut into 1-inch pieces
- 4 tbsp unsalted butter, melted
- 3 tbsp honey
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Place the cut carrots in a large bowl.
- In a small bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper until combined.
- Pour the butter mixture over the carrots and toss well until all pieces are evenly coated.
- Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.
- Roast for 20 to 25 minutes, tossing halfway through, until the carrots are tender and lightly caramelized.
- Serve immediately.
Notes
- For thinner carrots, reduce the roasting time by 5 minutes.
- If you prefer a stronger garlic flavor, add one more minced clove.
- Do not overcrowd the baking sheet; use two sheets if necessary to promote better roasting and caramelization.
