Description

A simple recipe for preparing tender-crisp asparagus roasted with olive oil, fresh lemon, and grated Parmesan cheese.

Ingredients

Scale
  • 1 pound fresh asparagus
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Wash the asparagus spears and snap off the tough, woody ends. You can trim them about one inch from the bottom.
  3. Place the trimmed asparagus on a rimmed baking sheet.
  4. Drizzle the asparagus with olive oil, then sprinkle evenly with salt and pepper. Toss gently with your hands to coat all the spears.
  5. Spread the asparagus in a single layer on the baking sheet to ensure even roasting.
  6. Roast for 10 to 15 minutes, depending on the thickness of the spears, until they are bright green and tender when pierced with a fork.
  7. Remove the pan from the oven. Immediately drizzle with fresh lemon juice and sprinkle with lemon zest and grated Parmesan cheese.
  8. Serve immediately while hot.

Notes

  • For thicker asparagus, add 2 to 3 minutes to the roasting time.
  • If you prefer a stronger garlic flavor, add 1 clove of minced garlic to the olive oil before tossing with the asparagus.
  • You can substitute Pecorino Romano cheese for Parmesan if desired.
