Description

A recipe for tender, caramelized roasted cauliflower served with a simple, creamy lemon-garlic tahini sauce.


Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cumin
  • 1/2 cup tahini paste
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 3 to 5 tablespoons cold water (for thinning)
  • 1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the cauliflower florets with olive oil, salt, pepper, smoked paprika, and cumin until evenly coated.
  3. Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Do not overcrowd the pan.
  4. Roast for 20 to 25 minutes, flipping the florets halfway through, until the edges are tender and browned.
  5. While the cauliflower roasts, prepare the sauce. In a small bowl, whisk together the tahini paste, lemon juice, and minced garlic. The mixture will thicken significantly.
  6. Slowly whisk in the cold water, one tablespoon at a time, until the sauce reaches a smooth, pourable consistency. You may need slightly more or less water depending on your tahini.
  7. Remove the roasted cauliflower from the oven.
  8. Arrange the warm cauliflower on a serving platter. Drizzle generously with the tahini sauce.
  9. Garnish with chopped fresh parsley before serving.

Notes

  • For extra flavor, add 1 teaspoon of maple syrup to the tahini sauce.
  • If you prefer softer cauliflower, cover the pan loosely with foil for the first 15 minutes of roasting.
  • Use fresh lemon juice for the best flavor in the sauce.
