  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 3 tablespoons olive oil

  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dried thyme


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a small bowl, combine the minced garlic, chopped rosemary, olive oil, salt, pepper, and thyme to make the rub.
  3. Pat the lamb chops dry with paper towels. This helps create a better crust.
  4. Rub the garlic rosemary mixture evenly over all sides of the lamb chops.
  5. Place the seasoned chops in a single layer on a baking sheet lined with parchment paper or in a roasting pan.
  6. Roast for 12 to 18 minutes, depending on the thickness and your desired doneness. Use a meat thermometer for accuracy: 130-135°F for medium-rare, 140-145°F for medium.
  7. Remove the chops from the oven and let them rest on a cutting board, loosely tented with foil, for 5 to 10 minutes before serving.

  • For a deeper sear, briefly sear the chops in a hot, oven-safe skillet on the stovetop for 1-2 minutes per side before transferring the entire pan to the oven.
  • If you prefer a crust, press the chops into a mixture of breadcrumbs and Parmesan cheese after applying the oil rub, before roasting.
