This recipe provides instructions for a hearty kale salad featuring roasted peanuts for texture and a simple peanut vinaigrette.

- 1 bunch kale, stems removed and chopped
- 1/2 cup raw peanuts
- 1 tablespoon olive oil for roasting
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce or tamari
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1/4 cup creamy peanut butter
- 2 tablespoons water, or more for thinning
- 1/4 cup chopped scallions
- 1 tablespoon sesame seeds
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Toss the raw peanuts with 1 tablespoon of olive oil and spread them on a baking sheet. Roast for 8 to 12 minutes, stirring halfway, until fragrant and lightly browned. Let them cool completely, then roughly chop.
- Place the chopped kale in a large bowl. Drizzle with 1 teaspoon of olive oil and a pinch of salt. Massage the kale with your hands for 2 to 3 minutes until the leaves soften slightly. This helps create the crunch.
- Prepare the dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey or maple syrup, ginger, garlic, and peanut butter until smooth. Add water one tablespoon at a time until the dressing reaches your desired consistency.
- Add the chopped roasted peanuts, scallions, and sesame seeds to the massaged kale.
- Pour the dressing over the salad and toss well to coat all the leaves. Serve immediately for the best crunch.
Notes
- For extra crunch, add 1/4 cup of toasted sunflower seeds along with the peanuts.
- You can prepare the dressing up to three days ahead and store it in the refrigerator.
- If you prefer a sweeter dressing, increase the honey or maple syrup by one teaspoon.
