- 3 pounds ripe tomatoes, halved
- 1 large yellow onion, quartered
- 4 cloves garlic, peeled
- 1/4 cup olive oil, divided
- 1 teaspoon kosher salt, plus more to taste
- 1/2 teaspoon black pepper, plus more to taste
- 4 cups vegetable or chicken broth
- 1/2 cup fresh basil leaves, packed
- 1/4 cup heavy cream (optional, for extra creaminess)
Instructions
- Preheat your oven to 400°F (200°C).
- Place the halved tomatoes, onion quarters, and garlic cloves on a large baking sheet.
- Drizzle with 3 tablespoons of olive oil. Sprinkle with salt and pepper. Toss gently to coat.
- Roast for 30 to 35 minutes, or until the vegetables are softened and slightly charred at the edges.
- Carefully transfer the roasted vegetables and any accumulated juices into a large pot or Dutch oven.
- Add the broth to the pot. Bring the mixture to a simmer over medium heat. Reduce heat and cook for 10 minutes.
- Remove the pot from the heat. Stir in the fresh basil leaves.
- Use an immersion blender to blend the soup until completely smooth. Alternatively, carefully transfer the soup in batches to a regular blender and blend until smooth, then return it to the pot.
- If using, stir in the heavy cream for added richness. Heat gently, but do not boil.
- Taste the soup and adjust salt and pepper as needed. Serve warm.

- For an extra smooth texture, press the blended soup through a fine-mesh sieve before adding the cream.
- If you want a deeper flavor, roast a small carrot along with the vegetables.
- Use high-quality, ripe tomatoes for the best flavor outcome.
