- 1 small yellow onion, finely chopped
- 1 cup basmati rice, rinsed
- 2 cups chicken or vegetable broth
- Pinch of saffron threads
- 1/4 teaspoon salt
- Pinch of black pepper
Instructions
- Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until softened and translucent, about 3-5 minutes.
- Stir in the rinsed basmati rice and toast for 1 minute, stirring constantly.
- Pour in the broth. Add the saffron threads, salt, and pepper. Stir well.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the liquid is absorbed and the rice is tender.
- Let the pilaf stand, covered, for 5 minutes before fluffing with a fork.
Notes
- For a richer flavor, you can steep the saffron threads in a tablespoon of warm broth for 5 minutes before adding them to the saucepan.
- Feel free to add a tablespoon of butter at the end for extra richness.
