Description

Enjoy these savory zucchini cheese muffins, a perfect blend of fresh zucchini, sharp cheddar, and fragrant herbs. They are easy to make and great for breakfast or a satisfying snack.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup grated zucchini, squeezed dry
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh parsley
  • 1 large egg
  • 1 cup milk
  • 1/4 cup vegetable oil

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. Stir in the grated zucchini, shredded cheddar cheese, chives, and parsley until well combined.
  4. In a separate medium bowl, whisk together the egg, milk, and vegetable oil.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For best results, ensure your grated zucchini is well-squeezed to remove excess moisture.
  • You can substitute feta cheese for cheddar, or use a mix of both.
  • Feel free to add other herbs you enjoy, such as dill or thyme.
