- 14 oz extra-firm tofu, pressed and cubed
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 broccoli crown, cut into florets
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 inch ginger, grated
- For the Sauce:
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tsp sesame oil
- 1 tsp cornstarch
- 1/4 cup water
Instructions
- In a bowl, toss tofu cubes with 2 tbsp soy sauce, 1 tbsp sesame oil, and 1 tbsp cornstarch until evenly coated.
- Heat olive oil in a large skillet or wok over medium-high heat. Add tofu and cook until golden brown and crispy on all sides. Remove tofu from skillet and set aside.
- Add bell pepper, broccoli, and carrot to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Add garlic and ginger to the skillet and cook for 1 minute until fragrant.
- In a small bowl, whisk together all sauce ingredients until smooth.
- Pour the sauce into the skillet with the vegetables. Bring to a simmer and cook until the sauce thickens.
- Return the crispy tofu to the skillet and toss to coat with the sauce.
- Serve immediately over rice or noodles.
Notes
- For extra crispy tofu, ensure you press out as much water as possible.
- Feel free to add your favorite vegetables like snap peas, mushrooms, or onions.
- Adjust the sweetness and saltiness of the sauce to your preference.
