Description

Ingredients

  • 14 oz extra-firm tofu, pressed and cubed
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 broccoli crown, cut into florets
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • For the Sauce:
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 1/4 cup water


Instructions

  1. In a bowl, toss tofu cubes with 2 tbsp soy sauce, 1 tbsp sesame oil, and 1 tbsp cornstarch until evenly coated.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add tofu and cook until golden brown and crispy on all sides. Remove tofu from skillet and set aside.
  3. Add bell pepper, broccoli, and carrot to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  4. Add garlic and ginger to the skillet and cook for 1 minute until fragrant.
  5. In a small bowl, whisk together all sauce ingredients until smooth.
  6. Pour the sauce into the skillet with the vegetables. Bring to a simmer and cook until the sauce thickens.
  7. Return the crispy tofu to the skillet and toss to coat with the sauce.
  8. Serve immediately over rice or noodles.

Notes

  • For extra crispy tofu, ensure you press out as much water as possible.
  • Feel free to add your favorite vegetables like snap peas, mushrooms, or onions.
  • Adjust the sweetness and saltiness of the sauce to your preference.
