Description
Make large batches of fluffy pancakes easily on one sheet pan. This recipe works well for serving a crowd or for meal prepping, with options for making it from scratch or using a pancake mix.
Ingredients
Scale
- 2 cups all-purpose flour
- 2 tablespoons baking powder
- 1 teaspoon salt
- 2 tablespoons granulated sugar
- 2 large eggs
- 1 3/4 cups milk
- 1/2 cup melted unsalted butter
- 1 teaspoon vanilla extract
- Optional: 1 cup blueberries or chocolate chips
- Cooking spray or parchment paper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a standard 13×18 inch baking sheet or line it with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine for fluffy pancakes.
- If using, gently fold in blueberries or chocolate chips.
- Pour the batter evenly onto the prepared sheet pan. Spread it gently to cover the bottom surface.
- Bake for 15 to 20 minutes, or until the edges are set and a toothpick inserted near the center comes out clean.
- Remove the pan from the oven. Let it cool for a few minutes before cutting into squares for serving.
Notes
- For a shortcut, substitute the dry ingredients (flour, baking powder, sugar) with the dry ingredients from one standard box of pancake mix, then proceed with the wet ingredients listed above.
- To use a pre-made mix like Kodiak Cakes, follow the package instructions for the amount of mix, but use the wet ingredients listed here (eggs, milk, butter, vanilla) for a richer result.
- For easy cleanup, always use parchment paper.
- These pancakes reheat well in a toaster oven or microwave for quick breakfasts.
