Description
A simple, healthy weeknight meal featuring cod fillets coated in Parmesan cheese and baked on a single sheet pan with roasted broccoli.

- 4 (5 ounce) cod fillets, about 1 inch thick
- 1 pound broccoli florets
- 2 tablespoons olive oil, divided
- 1/2 cup grated Parmesan cheese
- 1/4 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1/2 teaspoon dried Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh lemon juice
Instructions
- Preheat your oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper for easy cleanup.
- Toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper directly on the prepared baking sheet. Spread the broccoli into an even layer.
- Roast the broccoli for 8 minutes while you prepare the fish topping.
- In a small bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, salt, and pepper. Mix well.
- Pat the cod fillets dry with paper towels. Brush the tops of the cod fillets lightly with the remaining 1 tablespoon of olive oil.
- Press the Parmesan mixture firmly onto the top surface of each cod fillet to create an even crust.
- Remove the baking sheet from the oven. Push the broccoli slightly to the sides to make space. Place the crusted cod fillets onto the center of the baking sheet among the broccoli.
- Return the sheet pan to the oven and bake for an additional 10 to 14 minutes, or until the cod is opaque and flakes easily with a fork, and the Parmesan crust is golden brown. Cooking time depends on the thickness of your fillets.
- Remove from the oven. Drizzle the lemon juice over the cod and broccoli before serving.
Notes
- For a crispier crust, you can briefly place the sheet pan under the broiler for the last 1 to 2 minutes, watching carefully to prevent burning.
- If your broccoli florets are very large, cut them into smaller, uniform pieces so they roast evenly alongside the fish.
- You can substitute broccoli with asparagus or green beans, adjusting the initial roasting time if necessary.
