Enjoy a lighter version of classic shepherd’s pie with this recipe featuring lean ground turkey and a medley of vegetables, all topped with creamy mashed potatoes.

- 1 tablespoon olive oil
- 1 pound lean ground turkey
- 1 medium onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup low-sodium chicken broth
- 1 tablespoon cornstarch (optional, for thickening)
- 1 cup frozen peas
- 1 cup frozen corn
- 2 pounds potatoes, peeled and quartered
- 1/4 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Boil potatoes in salted water until tender, about 15-20 minutes. Drain and mash with milk and butter. Season with salt and pepper.
- While potatoes cook, heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up, until browned. Drain any excess fat.
- Add onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
- Stir in garlic, thyme, rosemary, salt, and pepper. Cook for 1 minute until fragrant.
- Pour in chicken broth. If you prefer a thicker gravy, whisk cornstarch with a little cold water and stir it into the skillet. Bring to a simmer and cook until slightly thickened.
- Stir in frozen peas and corn. Cook for a few minutes until heated through.
- Spoon the turkey and vegetable mixture into a baking dish.
- Spread the mashed potatoes evenly over the top.
- Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
Notes
- For extra flavor, you can add a splash of Worcestershire sauce to the turkey mixture.
- Feel free to add other vegetables like mushrooms or green beans.
- If you don’t have fresh herbs, you can use 1 teaspoon of dried mixed herbs.
