Description

This simple chicken salad recipe is perfect for a quick lunch or light dinner. Use leftover chicken or a rotisserie chicken for an easy shortcut. It’s creamy, flavorful, and comes together in minutes.

Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon fresh dill, chopped (optional)
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, combine the shredded or diced chicken, mayonnaise, celery, red onion, and fresh dill (if using).
  2. Add the Dijon mustard, salt, and pepper.
  3. Stir gently until all the ingredients are well combined.
  4. Taste and adjust seasoning as needed.
  5. Serve immediately or chill for at least 30 minutes to allow the flavors to meld.

Notes

  • You can substitute Greek yogurt for some or all of the mayonnaise for a lighter version.
  • Add other ingredients like chopped grapes, apples, or pecans for extra flavor and texture.
  • This chicken salad is great served on sandwiches, crackers, lettuce wraps, or as a dip.
