- 1.5 lbs shrimp, peeled and deveined
- 2 bell peppers (any color), thinly sliced
- 1 large onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 8 small flour tortillas
- Optional toppings: salsa, sour cream, guacamole, shredded cheese, lime wedges
Instructions
- In a bowl, toss the shrimp with 1 tablespoon of olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the sliced onions and bell peppers to the skillet and cook until softened, about 5-7 minutes.
- Push the vegetables to one side of the skillet and add the seasoned shrimp.
- Cook the shrimp for 2-3 minutes per side, until pink and cooked through.
- Stir the shrimp and vegetables together.
- Warm the tortillas according to package directions.
- Serve the shrimp and vegetable mixture in the warm tortillas with your favorite toppings.
