Description

This slow cooker chicken broccoli rice casserole is a simple, dump-and-go recipe perfect for busy weeknights. It brings together tender chicken, fresh broccoli, and creamy rice in one comforting dish.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 4 cups fresh broccoli florets
  • 2 cups uncooked instant white rice
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of mushroom soup
  • 1.5 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese, plus more for topping
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • Salt and black pepper to taste


Instructions

  1. Lightly grease the inside of your slow cooker.
  2. Add the cubed chicken to the bottom of the slow cooker.
  3. Layer the broccoli florets over the chicken.
  4. Sprinkle the uncooked instant rice evenly over the broccoli.
  5. In a separate bowl, whisk together the cream of chicken soup, cream of mushroom soup, chicken broth, milk, garlic powder, onion powder, salt, and pepper until smooth.
  6. Pour the soup mixture evenly over the rice, broccoli, and chicken. Do not stir.
  7. Cover and cook on low for 3-4 hours, or on high for 2-3 hours, until the chicken is cooked through and the rice is tender.
  8. During the last 30 minutes of cooking, stir in 1 cup of shredded cheddar cheese until melted and combined.
  9. If desired, sprinkle extra cheese on top during the last 15 minutes of cooking until melted and bubbly.
  10. Serve hot.

Notes

  • For a richer flavor, you can use regular long-grain white rice, but you may need to increase the liquid slightly and cook time will be longer (around 4-6 hours on low).
  • Feel free to add other vegetables like diced carrots or peas for extra nutrition and color.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
