Description

A classic Southern squash casserole with a crunchy cornflake topping, perfect as a soul-food side dish.


Ingredients

  • 4 cups sliced yellow squash
  • 1 cup chopped onion
  • 1/2 cup butter, melted
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup crushed cornflakes
  • 1/4 cup butter, melted (for topping)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced squash and chopped onion.
  3. Pour the melted butter over the squash and onion mixture.
  4. Add the cream of mushroom soup and sour cream. Stir well to combine.
  5. Fold in the shredded cheddar cheese.
  6. Pour the mixture into a greased 9×13 inch baking dish.
  7. In a small bowl, combine the crushed cornflakes and the remaining 1/4 cup melted butter.
  8. Sprinkle the cornflake mixture evenly over the squash casserole.
  9. Bake for 30-40 minutes, or until the casserole is bubbly and the topping is golden brown.
  10. Let it rest for a few minutes before serving.

  • You can use fresh or frozen squash. If using frozen, thaw and drain it well before using.
