- 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can Rotel (diced tomatoes and green chilies), undrained
- 1 (4 ounce) can green chilies, mild
- 4 cups chicken broth
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional toppings: shredded cheese, sour cream, avocado slices, fresh cilantro
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Add the cubed chicken to the pot. Cook, stirring occasionally, until the chicken is browned on all sides.
- Stir in the chili powder, cumin, and oregano. Cook for 1 minute to toast the spices.
- Add the black beans, kidney beans, diced tomatoes, Rotel, green chilies, and chicken broth to the pot.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for at least 30 minutes, or up to 1 hour, stirring occasionally. The longer it simmers, the better the flavors blend.
- Season with salt and pepper. Taste and adjust seasonings as needed.
- Serve hot with your favorite toppings.
Notes
- To make this chili even easier, you can use pre-cooked rotisserie chicken and skip the initial browning step. Shred the chicken and add it in with the broth.
- For a thicker chili, remove about 1 cup of the chili mixture near the end, blend it until smooth, and stir it back into the pot.
- If you like more heat, add 1/4 teaspoon of cayenne pepper with the other spices, or use hot Rotel.
