- 1 pound spaghetti
- 1/4 cup olive oil
- 6 cloves garlic, thinly sliced
- 1/4 teaspoon red pepper flakes (or to taste)
- 1 pound large shrimp, peeled and deveined
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Cook spaghetti according to package directions in salted water. Reserve about 1 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced garlic and red pepper flakes. Cook until garlic is golden brown, about 2-3 minutes. Be careful not to burn the garlic.
- Add shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes per side, until pink and cooked through.
- Add the drained spaghetti to the skillet with the shrimp and garlic oil.
- Add chopped parsley and a splash of the reserved pasta water. Toss everything together to coat the pasta. Add more pasta water if needed to create a light sauce.
- Season with additional salt and pepper to your liking. Serve immediately.
Notes
- For extra flavor, you can add a squeeze of lemon juice at the end.
- Adjust the red pepper flakes to control the spice level.
- If you don’t have fresh parsley, you can use dried parsley, but use less.
