Description

This Spiced Chocolate Zucchini Bread with Orange and Walnuts is a moist, flavorful quick bread perfect for any occasion. It’s an easy recipe that uses simple ingredients to create a delightful treat.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini (about 1 medium)
  • 1/2 cup chopped walnuts
  • 1/4 cup orange zest (from about 2 oranges)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate medium bowl, whisk together the eggs, vegetable oil, milk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the grated zucchini, chopped walnuts, and orange zest. If using, add the chocolate chips and stir them in.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.

Notes

  • Ensure your zucchini is well-drained after grating to prevent a soggy bread.
  • You can substitute other nuts like pecans for walnuts if preferred.
  • For an extra orange flavor, you can add a tablespoon of orange juice to the wet ingredients.
