- 1/4 teaspoon cinnamon
- Pinch of cayenne pepper (optional)
- 1 (15 ounce) can chickpeas, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup vegetable broth
- 1 cup chopped mixed vegetables (e.g., bell peppers, zucchini, carrots)
- Salt and black pepper to taste
- Fresh cilantro, chopped, for garnish
Instructions
- Heat olive oil in a large skillet or pot over medium heat.
- Add chopped onion and cook until softened, about 3-4 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
- Add the rinsed chickpeas, diced tomatoes, vegetable broth, and chopped mixed vegetables.
- Bring to a simmer, then reduce heat, cover, and cook for 10-12 minutes, or until vegetables are tender.
- Season with salt and black pepper to taste.
