Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • Pinch of cayenne pepper (optional)
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1 cup chopped mixed vegetables (e.g., bell peppers, zucchini, carrots)
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish


Instructions

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Add chopped onion and cook until softened, about 3-4 minutes.
  3. Add minced garlic and cook for 1 minute more until fragrant.
  4. Stir in cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  5. Add the rinsed chickpeas, diced tomatoes, vegetable broth, and chopped mixed vegetables.
  6. Bring to a simmer, then reduce heat, cover, and cook for 10-12 minutes, or until vegetables are tender.
  7. Season with salt and black pepper to taste.
  8. Garnish with fresh cilantro before serving.
