Ingredients

  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili garlic sauce (or sriracha)
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • 1/4 cup hot water (from cooking noodles)
  • Optional garnishes: chopped peanuts, sliced green onions, cilantro


Instructions

  1. Cook ramen noodles according to package directions. Reserve 1/4 cup of the hot noodle water before draining.
  2. While noodles are cooking, whisk together peanut butter, soy sauce, rice vinegar, chili garlic sauce, sesame oil, minced garlic, and grated ginger in a bowl.
  3. Gradually whisk in the reserved hot noodle water until the sauce is smooth and creamy.
  4. Drain the noodles and return them to the pot.
  5. Pour the peanut sauce over the noodles and toss to coat evenly.
  6. Serve immediately, topped with your favorite garnishes.
