A cold soba noodle salad tossed in a spicy, tangy peanut dressing with fresh vegetables.

- 8 ounces dried soba noodles
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce (or tamari for gluten-free)
- 3 tablespoons rice vinegar
- 2 tablespoons maple syrup or honey
- 1 tablespoon toasted sesame oil
- 1-2 tablespoons sriracha or chili garlic sauce (adjust to your heat preference)
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger
- 1/4 cup hot water (or more, to thin)
- 1 cup shredded carrots
- 1 cup shredded red cabbage
- 1/2 cup chopped scallions
- 1/4 cup chopped fresh cilantro
- 2 tablespoons chopped peanuts, for garnish
Instructions
- Cook the soba noodles according to package directions. Drain them immediately and rinse thoroughly under cold water to stop cooking and remove excess starch. Set aside.
- While the noodles cook, prepare the dressing. In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, maple syrup, sesame oil, sriracha, minced garlic, and grated ginger.
- Gradually whisk in the hot water, one tablespoon at a time, until the dressing reaches a smooth, pourable consistency. Taste and adjust spice or sweetness as needed.
- In a large bowl, combine the cooled soba noodles, shredded carrots, shredded cabbage, scallions, and cilantro.
- Pour the peanut dressing over the noodle and vegetable mixture. Toss everything gently until the noodles and vegetables are evenly coated.
- Chill the salad for at least 20 minutes before serving to allow the flavors to meld.
- Serve cold, garnished with chopped peanuts.
Notes
- If you need a gluten-free option, confirm your soba noodles are made from 100% buckwheat, or substitute with brown rice noodles.
- You can prepare the dressing up to three days ahead and store it in the refrigerator. You may need to thin it with a little warm water before using.
