Ingredients

  • 2 large sweet potatoes, cubed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup creamy peanut butter
  • 1/4 cup hot water
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (or more, to taste)
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • Cooked quinoa or brown rice, for serving
  • Optional toppings: chopped peanuts, cilantro, lime wedges


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, salt, and pepper on a baking sheet.
  3. Bake the sweet potatoes for 20 to 25 minutes, flipping halfway, until tender and slightly caramelized.
  4. While the potatoes bake, whisk together the peanut butter, hot water, soy sauce, maple syrup, rice vinegar, sriracha, minced garlic, and ginger in a small bowl until smooth. Add a splash more water if the sauce is too thick.
  5. Assemble your bowls: Place a serving of cooked quinoa or rice in the bottom.
  6. Top with the roasted sweet potatoes.
  7. Drizzle generously with the spicy peanut sauce.
  8. Add your favorite toppings like chopped peanuts and fresh cilantro. Serve immediately with a lime wedge.

Notes

  • For extra heat, increase the sriracha in the sauce.
  • If you prefer softer potatoes, you can steam them before tossing with oil and roasting briefly for color.
