- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey or maple syrup
- 1 tablespoon sriracha or other hot sauce (adjust to taste)
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger
- 1/4 cup water (or more, to thin sauce)
- 1 cup shredded carrots
- 1 cup thinly sliced red bell pepper
- 1/2 cup chopped peanuts
- 1/4 cup chopped fresh cilantro
- Optional: Cooked chicken, shrimp, or tofu for added protein
Instructions
- Cook noodles according to package directions. Drain and rinse with cold water.
- While noodles are cooking, whisk together peanut butter, soy sauce, rice vinegar, honey or maple syrup, sriracha, garlic, and ginger in a bowl.
- Gradually whisk in water until the sauce reaches your desired consistency.
- In a large bowl, combine the drained noodles, shredded carrots, and red bell pepper.
- Pour the peanut sauce over the noodle mixture. Toss gently to coat everything evenly.
- If using, add cooked chicken, shrimp, or tofu and toss again.
- Garnish with chopped peanuts and fresh cilantro.
- Serve immediately or chill for later.
Notes
- For a spicier dish, add more sriracha or a pinch of red pepper flakes.
- Feel free to add other vegetables like cucumber, edamame, or green onions.
- If you don’t have rice vinegar, apple cider vinegar can be a substitute.
- This salad is great for meal prep; store the salad and sauce separately if you plan to keep it for more than a day.
