Description

  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 2 cups cooked winter squash (such as butternut or acorn), mashed or puréed
  • 1/2 cup milk (any kind works)
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup crushed butter crackers or breadcrumbs (for topping)
  • 2 tablespoons melted butter (for topping)


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add the thawed and squeezed dry spinach to the skillet. Cook for 2-3 minutes, stirring to combine with the onion and garlic.
  5. In a large bowl, combine the cooked winter squash, milk, Parmesan cheese, salt, and pepper. Add the spinach mixture from the skillet and stir well to combine all ingredients.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. In a small bowl, combine the crushed crackers or breadcrumbs with the melted butter. Sprinkle this topping evenly over the casserole.
  8. Bake for 20-25 minutes, or until the casserole is heated through and the topping is golden brown.
