- 4 cups sliced yellow squash
- 4 cups fresh spinach
- 1 (10.5 ounce) can condensed cream of mushroom soup

- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 cup crushed crackers (like Ritz or butter crackers)
- 2 tablespoons butter, melted
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the sliced yellow squash and cook for about 5-7 minutes, until slightly tender.
- Add the fresh spinach to the skillet and cook until it wilts, stirring occasionally.
- In a large bowl, combine the cream of mushroom soup, sour cream, Parmesan cheese, black pepper, and salt. Mix well.
- Add the cooked squash and spinach mixture to the bowl with the soup mixture. Stir to combine everything evenly.
- Pour the mixture into a lightly greased 9×13 inch baking dish.
- In a small bowl, combine the crushed crackers and melted butter. Sprinkle this topping evenly over the casserole.
- Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
- Let it stand for a few minutes before serving.
