- 1 small onion, chopped

- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 (14 ounce) can artichoke hearts, drained and chopped
- 1 cup heavy cream
- 1 cup chicken or vegetable broth
- 8 ounces cream cheese, cubed
- 1 cup grated Parmesan cheese, plus extra for topping
- 1 cup shredded mozzarella cheese
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
- Cook the pasta according to package directions until al dente. Drain the pasta and set it aside.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
- Add the minced garlic to the skillet and cook for 1 minute more until fragrant.
- Stir in the squeezed, dry spinach and the chopped artichoke hearts. Cook for 3 minutes, stirring occasionally.
- Pour in the heavy cream and broth. Bring the mixture to a gentle simmer.
- Reduce the heat to low. Add the cubed cream cheese, stirring constantly until it melts smoothly into the sauce.
- Stir in the 1 cup of Parmesan cheese until the sauce is creamy. Season with salt and pepper.
- Add the cooked, drained pasta to the skillet and toss gently to coat everything evenly in the sauce.
- Transfer the pasta mixture to your prepared baking dish.
- Top evenly with the shredded mozzarella cheese and a sprinkle of extra Parmesan cheese.
- Bake for 15 to 20 minutes, or until the cheese is melted, bubbly, and lightly golden brown on top.
- Let it cool for 5 minutes before serving.
