These Spinach & Feta Puff Pastry Bites are incredibly easy to make and perfect for any party or gathering. They’re a crowd-pleasing appetizer that looks impressive but requires minimal effort.

- 1 sheet puff pastry, thawed
- 1 cup chopped fresh spinach
- 1/2 cup crumbled feta cheese
- 1 egg, beaten
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
- In a bowl, combine the wilted spinach, crumbled feta cheese, salt, and pepper.
- Unfold the puff pastry sheet on a lightly floured surface. Cut it into 9 equal squares.
- Place a spoonful of the spinach and feta mixture onto the center of each puff pastry square.
- Brush the edges of the puff pastry with the beaten egg.
- Fold the corners of the pastry towards the center, pinching them together to enclose the filling. You can also fold them into triangles or other shapes.
- Place the bites on a baking sheet lined with parchment paper.
- Brush the tops of the bites with the remaining beaten egg.
- Bake for 15-20 minutes, or until golden brown and puffed.
- Serve warm and enjoy!
Notes
- You can add a pinch of red pepper flakes to the filling for a little heat.
- For extra flavor, you can add a tablespoon of chopped sun-dried tomatoes to the filling.
- Ensure the puff pastry is fully thawed but still cold when you work with it for the best results.
