Ingredients

  • 1 pound udon noodles
  • 2 tablespoons vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1/2 cup snow peas
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • Optional: sesame seeds for garnish


Instructions

  1. Cook udon noodles according to package directions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, cornstarch, and water. Set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add broccoli, red bell pepper, and carrot. Stir-fry for 3-4 minutes until slightly tender.
  5. Add snow peas, garlic, and ginger. Stir-fry for another minute until fragrant.
  6. Add the cooked udon noodles to the skillet.
  7. Pour the sauce mixture over the noodles and vegetables.
  8. Toss everything together until the noodles and vegetables are well coated and the sauce has thickened, about 1-2 minutes.
  9. Serve immediately, garnished with sesame seeds if desired.

Notes
