- 1 pound udon noodles
- 2 tablespoons vegetable oil
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1/2 cup snow peas
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch
- 2 tablespoons water
- Optional: sesame seeds for garnish
Instructions
- Cook udon noodles according to package directions. Drain and set aside.
- In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, cornstarch, and water. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add broccoli, red bell pepper, and carrot. Stir-fry for 3-4 minutes until slightly tender.
- Add snow peas, garlic, and ginger. Stir-fry for another minute until fragrant.
- Add the cooked udon noodles to the skillet.
- Pour the sauce mixture over the noodles and vegetables.
- Toss everything together until the noodles and vegetables are well coated and the sauce has thickened, about 1-2 minutes.
- Serve immediately, garnished with sesame seeds if desired.
Notes
- Feel free to add your favorite protein like chicken, shrimp, or tofu.
- Adjust the sauce ingredients to your taste. Add a pinch of sugar for sweetness or chili flakes for heat.
- If you don’t have snow peas, you can use snap peas or green beans.
