- 1 large ripe avocado, diced
- 1/4 cup red onion, finely chopped

- 1 jalapeño, seeded and minced (optional)
- 3 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Prepare all fruit and vegetables: dice the strawberries and avocado, finely chop the red onion and cilantro, and mince the jalapeño if you are using it.
- Place the diced strawberries, avocado, red onion, cilantro, and jalapeño into a medium mixing bowl.
- In a small separate bowl, whisk together the balsamic vinegar, honey, lime juice, salt, and pepper to create the drizzle.
- Pour the drizzle mixture over the fruit and vegetable mixture.
- Gently fold all ingredients together until just combined. Avoid overmixing to keep the avocado chunks intact.
- Taste the salsa and adjust seasoning if necessary, adding more salt or lime juice as desired.
- Let the salsa rest for at least 10 minutes before serving to allow the flavors to meld.
Notes
- Serve this salsa immediately or chill for up to 2 hours. If chilling longer, add the avocado just before serving to prevent browning.
- This salsa pairs well with grilled chicken, fish, or tortilla chips. You can also use it as a topping for salads.
- For a sweeter salsa, increase the honey by one teaspoon. For more tang, increase the lime juice slightly.
