Description

Make this simple and refreshing Strawberry Bellini cocktail, perfect for serving at your next brunch gathering.

Ingredients

Scale
  • 1 cup fresh strawberries, hulled
  • 2 tablespoons granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 bottle (750 ml) chilled Prosecco or dry sparkling wine

Instructions

  1. Combine the strawberries, sugar, and lemon juice in a blender or food processor. Blend until completely smooth to create the strawberry puree.
  2. Press the puree through a fine-mesh sieve into a bowl to remove seeds, if desired. Discard solids.
  3. Chill the strawberry puree for at least 30 minutes.
  4. To serve, pour about 2 tablespoons of the chilled strawberry puree into the bottom of each champagne flute.
  5. Slowly top with chilled Prosecco. Stir gently once.
  6. Serve immediately.

Notes

  • For a non-alcoholic version, substitute the Prosecco with chilled sparkling white grape juice or sparkling white cranberry juice.
  • To make this ahead for a crowd, prepare the strawberry puree and keep it refrigerated. Do not mix with the sparkling wine until just before serving.
  • For an elegant presentation, garnish each glass with a thin slice of strawberry on the rim.
