Description
A festive and easy poke cake perfect for patriotic celebrations, featuring strawberry flavor and a flag design.

- 1 box (15.25 oz) white cake mix
- 3 large eggs
- 1/2 cup vegetable oil
- 1 1/4 cups water
- 1 box (3 oz) strawberry flavored gelatin
- 1 cup boiling water
- 1/2 cup cold water
- 1 container (8 oz) whipped topping
- Fresh strawberries, sliced
- Fresh blueberries
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Prepare cake mix according to package directions using eggs, oil, and 1 1/4 cups water. Pour batter into the prepared pan.
- Bake according to cake mix package directions, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 15 minutes.
- While the cake is cooling, dissolve the strawberry gelatin in 1 cup of boiling water in a medium bowl. Stir until completely dissolved.
- Stir in 1/2 cup of cold water.
- Using the handle of a wooden spoon or a large fork, poke holes evenly over the top of the warm cake, about 1 inch apart.
- Carefully pour the gelatin mixture over the poked cake, making sure the liquid seeps into the holes.
- Refrigerate the cake for at least 2 hours, or until the gelatin is set.
- Once the gelatin is set, spread the whipped topping evenly over the top of the cake.
- Arrange sliced strawberries and blueberries on top of the whipped topping to create a flag design. Use blueberries for the ‘union’ in the upper left corner and strawberry slices for the ‘stripes’.
- Keep refrigerated until ready to serve.
Notes
- Make sure the cake is still warm when you pour the gelatin over it for best absorption.
- Chill the cake thoroughly before adding the whipped topping and fruit for a clean design.
- For a richer flavor, you can substitute milk for water in the cake mix.
