Description

A festive and easy poke cake perfect for patriotic celebrations, featuring strawberry flavor and a flag design.


Ingredients

  • 1 box (15.25 oz) white cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 1/4 cups water
  • 1 box (3 oz) strawberry flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 container (8 oz) whipped topping
  • Fresh strawberries, sliced
  • Fresh blueberries


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Prepare cake mix according to package directions using eggs, oil, and 1 1/4 cups water. Pour batter into the prepared pan.
  3. Bake according to cake mix package directions, or until a toothpick inserted into the center comes out clean.
  4. Let the cake cool in the pan for 15 minutes.
  5. While the cake is cooling, dissolve the strawberry gelatin in 1 cup of boiling water in a medium bowl. Stir until completely dissolved.
  6. Stir in 1/2 cup of cold water.
  7. Using the handle of a wooden spoon or a large fork, poke holes evenly over the top of the warm cake, about 1 inch apart.
  8. Carefully pour the gelatin mixture over the poked cake, making sure the liquid seeps into the holes.
  9. Refrigerate the cake for at least 2 hours, or until the gelatin is set.
  10. Once the gelatin is set, spread the whipped topping evenly over the top of the cake.
  11. Arrange sliced strawberries and blueberries on top of the whipped topping to create a flag design. Use blueberries for the ‘union’ in the upper left corner and strawberry slices for the ‘stripes’.
  12. Keep refrigerated until ready to serve.

Notes

  • Make sure the cake is still warm when you pour the gelatin over it for best absorption.
  • Chill the cake thoroughly before adding the whipped topping and fruit for a clean design.
  • For a richer flavor, you can substitute milk for water in the cake mix.
