  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp lime juice
  • 1/4 cup chopped cilantro
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup diced red onion
  • Optional: chili powder for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the chicken pieces with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Spread the seasoned chicken on a baking sheet and bake for 15-20 minutes, or until cooked through and no longer pink in the center.
  4. While the chicken is baking, prepare the street corn mixture. In a medium bowl, combine the corn kernels, mayonnaise, sour cream, lime juice, cilantro, cotija cheese, and red onion. Season with salt and pepper to taste.
  5. Assemble the bowls. Divide the cooked rice among four bowls. Top with the baked chicken and a generous portion of the street corn mixture.
  6. Garnish with extra cilantro, cotija cheese, or a sprinkle of chili powder if desired.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the chicken seasoning or the street corn mixture.
  • If you don’t have cotija cheese, feta cheese can be used as a substitute.
