Description
Make a flavorful Mexican-inspired bowl featuring seasoned chicken, creamy charred street corn, and cilantro-lime rice.
Ingredients
Scale
- 1 pound boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked white rice
- 1 cup fresh or frozen corn kernels
- 1/4 cup mayonnaise
- 2 tablespoons sour cream or Greek yogurt
- 1/4 cup crumbled cotija cheese or feta cheese
- 1 tablespoon lime juice
- 1/2 teaspoon smoked paprika
- 1/4 cup chopped fresh cilantro, divided
- 1 lime, cut into wedges for serving
Instructions
- Season the chicken: Rub the chicken pieces with olive oil, chili powder, cumin, salt, and pepper.
- Cook the chicken: Grill or pan-sear the chicken over medium-high heat for 6 to 8 minutes per side, until fully cooked (internal temperature reaches 165°F). Let the chicken rest for 5 minutes, then slice or dice it.
- Prepare the street corn mixture: In a medium bowl, combine the mayonnaise, sour cream, cotija cheese, lime juice, and smoked paprika. Mix well.
- Char the corn: Heat a dry skillet over medium-high heat. Add the corn kernels and cook, stirring occasionally, until the kernels are lightly charred, about 5 to 7 minutes.
- Combine corn: Add the charred corn to the mayonnaise mixture. Stir in half of the chopped cilantro.
- Assemble the bowls: Divide the cooked white rice among four serving bowls. Top the rice with the sliced chicken. Spoon the street corn mixture over the chicken.
- Garnish and serve: Sprinkle the remaining cilantro over the bowls. Serve immediately with lime wedges.
Notes
- For a quick rice base, use pre-made cilantro-lime rice or cook white rice with 1 tablespoon lime juice and 1/4 cup chopped cilantro mixed in after cooking.
- If you prefer shredded chicken, cook the chicken in a slow cooker or pressure cooker, then shred it before tossing with the spices.
- Cotija cheese is traditional, but Parmesan cheese can substitute if cotija is unavailable.
