Make your own street corn seasoning at home. This simple blend of chili powder, lime zest, and cotija cheese powder brings authentic Mexican street corn flavor to your kitchen.

- 2 tablespoons chili powder
- 1 tablespoon smoked paprika
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper (or to taste)
- 2 tablespoons dried lime zest
- 1/4 cup cotija cheese, finely grated and dried (or cotija cheese powder)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- If using fresh cotija cheese, grate it finely and spread it on a baking sheet. Bake at 200°F (95°C) for 1-2 hours, or until completely dry and crumbly. Alternatively, you can air dry it for 24-48 hours. Once dry, you can grind it into a powder in a spice grinder if desired.
- In a small bowl, combine the chili powder, smoked paprika, garlic powder, onion powder, ground cumin, and cayenne pepper.
- Add the dried lime zest and dried cotija cheese (or cotija cheese powder) to the spice mixture.
- Stir in the salt and black pepper.
- Mix all ingredients thoroughly until well combined.
- Transfer the seasoning blend to an airtight container. Store in a cool, dark place for up to 3 months.
- To use, sprinkle generously on grilled or roasted corn. You can also mix it with mayonnaise or crema for a traditional street corn topping.
Notes
- Adjust the cayenne pepper to your preferred level of heat.
- For a quicker option, buy pre-made cotija cheese powder if available.
- This seasoning is also great on popcorn, roasted vegetables, or chicken.
